The Harmonious Sounds of Fermentation at Tomic


Following the example of our great architect Bašić and his famous organs, we in our vinery are also trying to create sound, harmonious sound. Silent fermentation of wine frees up the carbon dioxide which, while passing through the entry point of the tank, produces certain sound which depends on the phase of fermentation and the level of new vine in the tank, which can be regulated. In that way, we produce harmonious sound chords which entertain us during picking and processing of grapes.

Andro Tomic Welcomes Cliff Rames and Fred Dex MS to Jelsa


An American wine theme in Jelsa last night, as Andro Tomic was on hand with other winemakers to welcome two distinguished wine experts from the United States for a dinner with wine tasting at new Jelsa winebar Artichoke.

Cliff Rames is a great friend of Croatian wine and the international pioneer of wine promotion for the country, and he has made a magnificent contribution from his New York base with his Wines of Croatia blog.

Cliff has been joined on this trip by Master Sommelier Fred Dex, on his first trip to Croatia, and what better place to start than in the town of wine in Jelsa. The two managed a quick trip to visit Master of Wine Jo Ahearne and her operation in Sveta Nedjlelja before sitting down to check out the latest from the Hvar wine scene.
